Good old mac and cheese… So simple but so tasty!

INGREDIENTS
- 2 tablespoons (30 ml) unsalted butter
- 2 tablespoons (30 ml) olive oil
- 1 small onion, minced
- pinch of paprika
- pinch of turmeric
- 4 tablespoons (60 ml) flour
- 2 cups (500 ml) milk
- 1 1/2 cup old cheddar
- 1 package (about 12 oz or 340 g) elbow macaroni
- Salt and pepper to taste
METHOD
- In a large skillet over medium heat, heat butter and olive oil, add onion and cook until translucent
- Add paprika, turmeric and flour while whisking until the mixture forms a paste and the flour is cooked (about 2 minutes)
- Gradually add milk and cheese and stir until cheese is completely melted
- Bring a large pot of lightly salted water to a boil, add pasta and cook for 8 to 10 minutes (or until al dente)
- Drain pasta, add to cheese mixture and mix well
- Season with salt and pepper
